Food Chemistry

Research

Our research focuses on the physiological functions of food factors such as probiotics, prebiotics and polyphenols for our health.

1) Diseases induced by high-fat diets and environmental stresses are recognized as most important health problems all over the world. We are interested in these pathogenesis and the preventive roles of food factors such as prebiotics and polyphenols against these diseases (T. Suzuki).

2) We have been studying about immune regulatory effect of factors derived from food and effective microorganism for development of functional food (Y. Yamamoto).
