家畜と家禽を、安全性と生産性に優れた食資源として生産するための技術開発に貢献するために、これらの生理機構を追究している。このため、卵やミルクの生産における内分泌・免疫機構に関する研究を展開している。
1）鳥類の生殖器における免疫機能とその内分泌的調節機構の解明。雌雄生殖器の適応および自然免疫機構を明らかにして、生体防御機能を高め、卵の微生物汚染を抑制することを目指している。免疫機能と産卵や受精機能との関連も追究している（吉村）。
2）ウシやヤギの乳腺における抗菌因子の産生機構の解明を目指しており、それを利用して乳房炎を予防・治療することを目標にしている。また、初乳の有用成分がウシやヤギの健康に及ぼす影響についても検討している（磯部）。
3）鳥類の生殖器官や消化管といった粘膜組織の免疫調節機構の解明や、有用細菌を用いた健康促進作用に関する研究を行っている。また、卵殻形成機能に関する研究も行っている（新居）。
